Oven baked salmon risotto

The ingredients for oven baked salmon risotto:

  • 2 table spoons olive oil;
  • 15 gram unsalted butter;
  • 3 shallots; chopped
  • 1 teaspoons dried basil;
  • 2 salmon fillets; in pieces
  • 100 gram small crayfish; peeled
  • 100 gram green asparagus tips; cleaned
  • 270 gram risotto rice;
  • 1 liter fish stock; boiled
  • 75 gram Grana Padano; grated

How to make oven baked salmon risotto?

  1. Preheat the oven at 200°C.
  2. Add the olive oil and the unsalted butter to the pan.
  3. Lightly fry the shallot in the pan until translucent.
  4. Add the dried basil, the salmon fillet, the small crayfish and the green asparagus tips and fry shortly while stirring.
  5. Add the risotto rice and fry shortly while stirring.
  6. Add the fish stock
  7. Bake in the oven for 30 minutes.
  8. Add the Grana Padano
  9. Your dish is ready, enjoy!
