The ingredients for irish stew:
- 500 gram beef stew meat;
- 330 milliliter Guinness;
- 1 kilo potatoes; peeled and cut into pieces
- 1 onion; chopped
- 4 cloves garlic; chopped
- 200 gram carrots; in slices
- 25 gram flour;
- 70 gram tomato paste;
- 500 milliliter beef stock;
- 2 bay leaves;
- 10 gram thyme; only the leaves
- olive oil;
- butter;
How to make irish stew?
- Add the olive oil and the butter to the pan.
- Add the beef stew meat to your pan and sear on medium temperature until colored. Use multiple portions if needed.
- Remove from pan and set aside.
- Lightly fry the onion, the garlic and the carrot in the pan until translucent.
- Add the flour and mix together to a roux.
- Add the tomato paste to the stew.
- Deglaze with the Guinness.
- Add the beef stock, the bay leaves and the thyme to the stew.
- Stew for at least 2 hours.
- Add the potatoes to the stew.
- Stew for at least 2 hours.
